ARGH ARGH ARGH I WANNA PUNCH MYSELF IN THE FACE!
I
knew that enzymes work in acidic conditions...but then i thought ITS THE MOUTH FOR GOODNESS SAKE IT DOESNT TASTE LIKE ACID [eg vommit that has hydrochloric acid and lime and lemon etc]
What is wrong with me?! Why did i have to change that freaking answer?!
the enzyme works in a 5.6-6.9 range pH in the mouth..so by inference inorder for the enzyme to be reactive with starch and not the acid/s creating the weakly acidic environment salivary amylase must be non-polar (neither acid or base). Also on this site pH is not included in the info sheet on human salivary amylase. The pH range of the mouth is 5.6-6.9 slightly acidic, and the average body temp is 37 deg C- this is the environment in which human amylase is most active.
